Japanese Champon Recipe

Champon is a Japanese noodle dish containing a meat broth, stir fried vegetables, seafood, and pork or beef with ramen noodles. The dish is considered to be the regional dish of Nagasaki, however it is enjoyed all over Asia, particularly in South Korea and China – where the dish originates.
Origin and Cultural Significance
Champon is greatly influenced by Chinese cuisine and was first introduced to Japan in the late 19th century by immigrants to the country. Since the arrival of the dish in Japan it has become the staple in the city of Nagasaki, however you can find different versions of the dish all over the country – for example, in Okinawa it is made with rice, vegetables, and a thinly sliced beef or pork.
Unlike many ramen dishes, Champon is made in one pot with the noodles being cooked directly in the broth. The meal was originally popular with students in the Nagasaki region who sought out a cheap and filling meal.
The main ingredients of the dish vary from season to season and the region in which it is cooked – therefore the dish has never tastes exactly the same. Champon is a great example of Chinese and Japanese fusion which can be found all over the country.

Japanese Champon Recipe
Champon is a noodle dish containing a meat broth, stir fried vegetables, seafood, and pork or beef with ramen noodles.
Ingredients
- Pork belly (sliced thin) - 4 oz.
- Shrimp (peeled and deveined) - 4 oz.
- Squid (cleaned and sliced) - 4 oz.
- Fish cakes (sliced) - 4 oz.
- Napa cabbage (chopped) - 1 cup
- Carrot (sliced) - 1
- Green onions (chopped) - 2
- Bean sprouts - 1 cup
- Ramen noodles - 2 servings
- Chicken or pork broth - 4 cups
- Soy sauce - 2 tbsp
- Sake - 2 tbsp
- Vegetable oil - 2 tbsp
- Salt and pepper - to taste
Instructions
- Heat vegetable oil in a large pot over medium heat. Add pork belly and cook until browned.
- Add shrimp, squid, and fish cakes, and cook until seafood is just done.
- Stir in napa cabbage, carrot, green onions, and bean sprouts. Cook until vegetables are tender.
- Add chicken or pork broth, soy sauce, and sake. Bring to a simmer.
- Add ramen noodles and cook until noodles are tender.
- Season with salt and pepper to taste.
- Serve hot, garnished with extra green onions if desired.
