South Korean Galbi Tang Recipe

Galbi tang is a South Korean soup made with beef short ribs, seasoned with garlic and soy sauce.
To make galbi tang, the beef is usually slow-cooked for a long period in the broth, making the meat tender and rich.
It is then commonly served with a side of steamed rice and a range of Korean side dishes such as kimchi.
The word ‘Galbi’ translates to ribs in English, and ‘Tang’ means soup.
Origin & Cultural Significance
The first records of galbi tang can be traced back to Korean royal court banquets held in the 1890s. Although, some believe that the recipe originated during the Goryeo Dynasty, over 800 years ago.
Historically, beef has been an expensive ingredient in Korea, thus galbi tang was reserved for special occasions and is still considered a special occasion meal today, often served at wedding receptions.

South Korean Galbi Tang Recipe
Galbi Tang is a South Korean soup made from beef short ribs with a clear, rich broth.
Ingredients
- Beef short ribs (chopped) - 2 lbs
- Water - 8 cups
- Garlic (minced) - 5 cloves
- Onion - 1
- Korean radish (cut into chunks) - 1 cup
- Green onions (sliced) - 2
- Soy sauce - 2 tbsp
- Salt - 1 tsp
- Black pepper - 1/2 tsp
- Toasted sesame oil - 1 tsp
- Cooked rice - 1 cup
- Chopped green onions (for garnish)
Instructions
- Soak the beef short ribs in cold water for about an hour to remove excess blood.
- Drain the ribs and rinse them under cold water.
- Place the ribs in a large pot, cover with water, and bring to a boil over high heat for approximately 5 minutes.
- After boiling, drain and rinse the ribs under cold water.
- In a large pot, add the parboiled ribs, 8 cups of water, garlic, halved onion, Korean radish, and green onions.
- Bring the water to boil over high heat, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the meat becomes tender.
- Remove the onion, radish, and green onions from the pot and discard them.
- Season the broth with soy sauce, salt, and black pepper, adjusting to taste.
- Add the toasted sesame oil to the soup for added aroma and flavor.
- Ladle the soup into bowls, each with a few pieces of short ribs.
- Serve the Galbi Tang hot, garnished with chopped green onions, with steamed rice on the side.
