Shucos are a Guatemalan version of a hot dog, a street food that is popular throughout the country, often eaten at the end of a night out in the city. Shucos are popular with both locals and tourists, offered with a variety of different toppings including both local and indigenous ingredients, as well as international options. 

Shucos are commonly served with guacamole, cabbage, mixed meats, and a variety of other sides and toppings – with most locals having their favorite combination. 

Origin & Cultural Significance 

Shucos started as a snack outside Liceo Guatemala, where employees would eat street food and they quickly grew to be popular all over the country.

The name Shucos is derived from the Guatemalan slang word for ‘messy’ or ‘dirty’ thanks to the number of toppings on the hot dog. 

Hot dogs were introduced to the country by European immigrants, however, they have a big Guatemalan twist with local ingredients transforming the hot dogs. Shucos are sold from street vendors and food carts and are often enjoyed on the go, especially during the workday when it’s not uncommon to see businessmen tucking into the street foods.

Ingredients

  • Hot dog sausages - 4
  • Hot dog buns - 4
  • Cabbage (shredded) - 1 cup
  • Carrots (shredded) - 1/2 cup
  • Red onion (thinly sliceD) - 1/4 cup
  • Tomato (diced) - 1
  • Avocado (sliced) - 1
  • Mayonnaise - 1/4 cup
  • Mustard - 2 tbsp
  • Ketchup - 2 tbsp
  • Hot sauce - to taste
  • Salt and pepper - to taste
  • Vegetable oil - for grilling

Instructions

  1. Preheat your grill or grill pan over medium heat.
  2. Grill the hot dog sausages until cooked through and slightly charred, about 5-7 minutes.
  3. In a bowl, combine shredded cabbage, shredded carrots, thinly sliced red onion, diced tomato, and sliced avocado. Toss with mayonnaise, mustard, ketchup, hot sauce, salt, and pepper.
  4. Grill the hot dog buns until lightly toasted.
  5. Place a grilled hot dog sausage in each bun.
  6. Top the hot dogs with the prepared cabbage slaw mixture.
  7. Serve hot, with additional hot sauce and condiments on the side.
