Peruvian Lomo Saltado Recipe

Lomo Saltado is a Peruvian stir-fry dish made using strips of beef with onions, hot chilies, tomatoes, and a combination of Chinese and Peruvian spices. Typically Lomo Saltado is served with both white rice and crispy french fries. 

The dish is a great example of Chifa cooking – the fusion of Chinese and Peruvian ingredients and culinary techniques that is popular all over Peru. Lomo Saltado was created by Chinese chefs producing street food in Chinco, using a wok and traditional Asian ingredients like vinegar and soy sauce.

Origin and Cultural Significance 

During the 19th and 20th centuries, a large number of Chinese immigrants arrived in Peru, eventually creating the Chifa cuisine – a combination of Peruvian and Chinese cooking techniques. Using local Peruvian ingredients and imported cooking techniques from China, Chifa cuisine can be found all over Peru, even today, and is a staple part of Peruvian cuisine. 

Traditionally the dish is prepared with beef or steak, and the cut of the meat can make all the difference to the final dish. As a stir fry the meat is cooked quickly on a high heat, and is typically made with a tender cut like ribeye, sirloin, tenderloin, flat iron, or tri-tip. 

Lomo Saltado has become one of Peru’s most popular street dishes with both tourists and locals alike, although the dish is also served at family gatherings, special occasions, and as an everyday comfort food in homes all over the country.

Lomo Saltado is a Peruvian-style stir-fry made using strips of beef with onions, hot chilies, tomatoes, and a combination of Chinese and Peruvian spices.

Ingredients

  • Beef sirloin (cut into thin strips) - 1 lb
  • Red onion (sliced) - 1
  • Tomatoes (sliced) - 2
  • Yellow bell pepper (sliced) - 1
  • Garlic (minced) - 3 cloves
  • Soy sauce - 1/4 cup
  • Red wine vinegar - 2 tbsp
  • Fresh cilantro (chopped) - 1/4 cup
  • French fries - 2 cups
  • Cooked white rice - 4 cups
  • Vegetable oil - 2 tbsp
  • Salt and pepper - to taste

Instructions

  1. In a bowl, marinate the beef strips with soy sauce, red wine vinegar, salt, and pepper for about 15 minutes.
  2. Heat vegetable oil in a large skillet or wok over high heat. Add the marinated beef and stir-fry until browned, about 3-4 minutes. Remove the beef from the skillet and set aside.
  3. In the same skillet, add a bit more oil if necessary, and sauté the minced garlic until fragrant. Add the sliced onion and bell pepper, stir-frying until they begin to soften.
  4. Add the sliced tomatoes to the skillet and cook for another 2-3 minutes.
  5. Return the beef to the skillet, mixing it with the vegetables. Cook for an additional 2 minutes, allowing the flavors to meld together.
  6. Stir in the fresh cilantro and remove from heat.
  7. Serve the Lomo Saltado hot with a side of French fries and cooked white rice.
