Colombian Patacones Recipe

Patacones are a Colombian staple dish made from twice-fried plantain slices -often served as a small snack with dipping sauces, or as a side dish to a main meal.

Also known as tostones, fritos, tachinos, or chatinos, in other Latin American countries, they are an easy and cheap snack to make that are popular all over Latin America.

Origin and Cultural Significance

Patacones were first introduced to Colombia by enslaved Africans during the colonial period. The dish has deep roots in Africa but has grown to become one of Colombia’s most popular street foods and a huge part of home cooking all over the country. 

The dish is made using unripe, green plantains, which are fried twice—creating a crunchy exterior, and a soft fluffy interior. After the first frying, they are pounded flat with a tool called a tostonera and fried for a second time. Once they are crispy and golden brown in color they are served either hot or cold.

Ingredients

  • Green plantains (peeled and sliced) - 4
  • Vegetable oil (for frying) - 2 cups
  • Salt - to taste

Instructions

  1. Heat the oil in a large frying pan over medium-high heat.
  2. Fry the plantain slices for 2-3 minutes on each side until golden.
  3. Remove from oil and flatten each slice using a tostonera or the bottom of a glass.
  4. Fry the flattened plantains again until crispy.
  5. Remove and drain on paper towels, then sprinkle with salt.
