Chinese Guotie (Potstickers) Recipe

Guotie, also known as potstickers, are a type of pan-fried Chinese dumplings filled with meat and vegetables such as Chinese cabbage, ginger, and scallions. The bottom of the dumplings are crispy from the pan, while the top is steamed and much softer. They are most commonly served as a snack or appetizer.

Origin and Cultural Significance

Guotie is a pan-fried version of the Chinese staple Jiaozi, which can be served boiled, steamed, deep-fried, or pan fried. The dish originates in the northern region of China and is one of the most important dishes eaten throughout the Chinese New Year, although in Northern China the dish is eaten all year round. 

Guotie is popular all over the world, however outside of China they are more commonly known as potstickers or referred to as the Japanese variety (gyoza) – although they are essentially the same thing. 

Chinese dumplings are thought to have originated during the era of Eastern Han (AD 25 – 220) although this is greatly debated throughout China, with others suggesting they were created during the Western Han dynasty (206 BC – AD 9). Either way, they are one of the oldest foods in the world and still eaten today across China and the rest of the world.

Chinese Guotie (Potstickers) Recipe

Ingredients

  • Ground pork - 1 lb
  • Napa cabbage (finely chopped) - 1 cup
  • Green onions (chopped) - 2
  • Ginger (minced) - 1 tbsp
  • Soy sauce - 2 tbsp
  • Sesame oil - 1 tbsp
  • Dumpling wrappers - 1 package
  • Vegetable oil - 2 tbsp
  • Water - 1/2 cup
  • Dipping sauce (soy sauce, vinegar, chili oil) - to taste

Instructions

  1. In a bowl, combine ground pork, napa cabbage, green onions, ginger, soy sauce, and sesame oil.
  2. Place a small spoonful of the filling in the center of each dumpling wrapper.
  3. Fold the wrapper in half and pleat the edges to seal.
  4. Heat vegetable oil in a large skillet over medium-high heat. Add the dumplings, flat side down, and cook until the bottoms are golden brown.
  5. Pour in the water, cover, and steam for about 5 minutes or until the water has evaporated.
  6. Serve hot with dipping sauce.
