Mish Mash is a traditional Bulgarian dish of eggs, cheese and vegetables. The vegetables, usually onions, sweet peppers and tomatoes are cooked until soft and the sauce has evaporated. Whisked eggs are stirred in until they are cooked. The dish is topped with cheese before serving.

A soft, fresh white cheese is used like sirene, a cheese made in Bulgaria. Though often described as a scramble egg dish, the finished product is not scrambled but rather a silky mixture because are stirred constantly as they cook.

Like much of Bulgarian cuisine, this dish features fresh ingredients, usually locally grown. It is served for any meal and eaten as a main course or side dish. Mish Mash variations include using more vegetables such as carrot. Some variations are made with meat.

Origin & Cultural Significance

The exact origin of mish mash is unknown. The name is thought to mean hodge podge or mess.

Mish Mash is a traditional Bulgarian dish of eggs, cheese and vegetables.

Ingredients

  • Sweet peppers - 6
  • Tomatoes (large) - 2
  • Onion (large) - 1
  • Eggs - 5
  • Feta - 200g
  • Mixed herbs - 1 tsp
  • Olive oil - 3 tbsp
  • Salt - 1 pinch
  • Black pepper - ½ tsp
  • Parsley - to garnish

Instructions

    1. Cut the onion in half and slice.
    2. Cube the peppers.
    3. Dice or grate the tomatoes.
    4. Break the feta into crumbs.
    5. Beat the eggs lightly into a bowl.
    6. Wash and chop the fresh parsley.
    7. Saute the onions for 5-10 minutes until translucent, then add the chopped peppers.
    8. Saute them for 5-10 minutes, stirring regularly.
    9. Add the diced tomatoes.
    10. Sprinkle the dry spices on top and stir to combine.
    11. When the moisture in the dish evaporates, add the eggs.
    12. Stir continuously and cook until the eggs are done.
    13. Remove from the heat and sprinkle with the crumbled feta.
    14. Taste and if needed, add salt.
    15. Serve hot or cold, garnished with chopped fresh parsley and
      ground black pepper.
