Ovocné knedlíky is a type of dumpling from the Czech Republic that is filled with fruit. The dumpling dough is made with flour, water, salt, milk, sugar and eggs. Small pieces of dough are filled with fruit and pinched to seal shut.

They are cooked lightly in boiling water then eaten with crumbly cheese and sometimes additional toppings like icing sugar and butter.

‘Ovocné knedlíky’ means fruit dumplings and is sometimes called ‘kynuté ovocné knedlíky’, meaning yeast fruit dumplings.

Most fruit dumplings are made using the traditional yeast dough, but there is a potato dough variation.

Fruit fillings vary, often based on what fruit are in season. These include blueberries, strawberry, apricots, plums or cherries. The most basic topping is powdered sugar. Other topping combinations include butter, crumbly cheese, fruit sauce, cream, and spices like cinnamon.

Ovocné knedlíky and other boiled dumplings are typically made with a coarse wheat flour called Czech hrubá mouka. Since American flours are not typically sold by varying level of coarseness, using all-purpose flour may not garner the same results when making these dumplings. A suitable substitute can be made by replacing part of the flour with semolina.

Origin and Cultural Significance

Ovocné knedlíky originates in the Czech Republic and has been a part of the cuisine at least as far back as the 17th century.

Ingredients

Yeast dough

  • Flour (all purpose) - 5 ⅔ cups
  • Milk (lukewarm) - 1 ½ cup milk
  • Yeast - 2 tsp
  • Sugar (granulated) - 1 tsp
  • Egg - 1
  • Salt - ½ tsp

Filling

  • Blueberries (fresh) - 13 oz
  • Sugar (granulated) - ¼ cup

Topping

  • Farmers cheese (or sour cream) - 7 oz
  • Powdered sugar - 1 cup
  • Butter (unsalted and melted) - 1/3 stick

Instructions

    1. In a bowl combine 1 teaspoon granulated sugar with the yeast.
    2. Add the milk.
    3. Leave the yeast in a warm place to activate about 10-15 minutes.
    4. In a large bowl, add the flour with the egg, salt, and the yeast mixture.
    5. Combine everything first with a spoon, then dump the mixture onto a work surface and process with your hands into a soft dough.
    6. Return the ball of dough to the bowl, cover with cling film or a clean cloth, and leave in a warm spot to rise for 45 minutes.
    7. Meanwhile, combine ¼ cup granulated sugar and blueberries.
    8. Roll out the raised smooth dough into a rectangle about half to three-quarters of an inch thick.
    9. Cut into squares about 3 inches on each side.
    10. Place a teaspoon and a half of the sweetened blueberries in the center of each square.
    11. Close the dumpling carefully to prevent the juices from running out.
    12. In a large skillet, bring lightly salted water to a full boil then turn the stove down to medium heat and place dumplings into it.
    13. Cover the skillet with a lid and cook for 8 minutes, do not flip the dumplings.
    14. Once cooked, carefully transfer them with a slotted spoon to a bowl.
    15. Release the steam by poking the cooked dumplings with a fork and brush their top with melted butter.
    16. Serve with crumbled farmers cheese and powdered sugar, drizzle with melted butter.
