Cóctel de Conchas is a seafood cocktail containing fresh clams, citrus juices, tomatoes, onions, and cilantro.
Ingredients
- Fresh clams (cleaned) - 2 lbs
- Lime juice - 1/2 cup
- Lemon juice - 1/4 cup
- Tomatoes (diced) - 2
- Red onion (finely chopped) - 1/2 cup
- Fresh cilantro (chopped) - 1/4 cup
- Hot sauce (optional) - to taste
- Salt and pepper - to taste
Instructions
- Steam the clams in a large pot until they open. Remove from heat and let cool.
- Remove the clams from their shells and chop them into bite-sized pieces.
- In a large bowl, combine the clam meat, lime juice, lemon juice, tomatoes, red onion, and cilantro.
- Stir in hot sauce, salt, and pepper to taste.
- Chill in the refrigerator for at least 1 hour before serving.
- Serve cold, garnished with additional cilantro if desired.
