Paraguayan Chipa Guasu Recipe

Chipa guasu, also known as chipaguazu, is a traditional savory Paraguayan cake made from fresh corn kernels, onions and cheese. Other ingredients are milk, salt, eggs and oil. The ingredients are combined and baked until firm. It is served as a side or snack.
Guasu is the Guarani word for cake or bread. The Guarani are an indigenous group in parts of South America including Paraguay. Chipa refers to variety of cakes or breads made with corn or cassava as the major starch source.
Chipa guasu is just one type of chipa that can be found in Paraguay. Other popular chipa are plain chipa which is also known as paraguan cheese bread, chipa so’o which is stuffed with meat and eggs and chipa paquita which is made with cornstarch, cheese and wheat flour.
There are an estimated 70 types of chipa.
Typical accompaniments are yerba mate, grilled meat and rice salad. Rice salad is made with mayonnaises and is similar to potato salad but uses rice as the main starch. Yerba mate is a traditional herb tea and is served with chipa guasu when it is eaten alone.
Origin and Cultural Significance
Chipa was prepared by the indigenous Guarani group for centuries. They were known for their cultivation and integration of corn into their cuisine. This is a typical Sunday food as part of asado which is a Sunday barbeque.

Paraguayan Chipa Guasu Recipe
Chipa guasu is a traditional savory Paraguayan cake made from fresh corn kernels, onions and cheese.
Ingredients
- Onion, sliced - 1
- Lard - ½ cup
- Eggs - 4
- Corn kernel (fresh) – 5 cups
- Salt - 2 tsp
- Whole milk - 1 ½ cups
- Queso Paraguay or queso fresco (in chunks) - 2 cups
Instructions
- Preheat the oven to 390F.
- Grease a 2 1/2-quart pan.
- In a small frying pan, sauté the onion in oil for about 8 minutes.
- To a blender cup add: eggs, corn, salt, milk, and onion/oil.
- Blend until creamy.
- Pour batter into the prepared pan.
- Add 1 cup of cheese and mix into the batter with a knife.
- Top with more cheese.
- Bake for 30 to 35 minutes or until golden brown and firm to the touch.
