Bosnian Tufahija Recipe
Tufahija is a Bosnian dessert made from poached apples stuffed with walnuts and sugar before being topped with whipped cream. The dish is traditionally enjoyed during festive periods and on special occasions.
Different variations of the dish can also be found in Serbia, Bulgaria, and Croatia – however, the Bulgarian version—pechani yabalki—is baked rather than poached.
Origin and Cultural Significance
During the Ottoman empire, Tufahija was brought to Bosnia. The name Tufahija comes from the Turkish word ‘tuffahiye’ and the Arabic word ‘tuffah’, meaning apple. Maybe people believe the dish originated in Persia, where you can find similar baked and poached apple desserts.
The sweet treat is often served chilled alongside a strong Turkish style coffee, and is quick and simple to prepare. The dish is sometimes described as the Bosnian way to say welcome. The dessert is eaten all year round, at homes, in restaurants, and on special occasions.
