Japanese Kamaage Udon Recipe

Kamaage udon noodles are also boiled but aren’t rinsed afterwards. Instead, they are served plain in their boiling water with no added flavors, so it is served with a side sauce.

Ingredients
- Udon noodles (dried) - 7 oz
- Water - 1 gallon
- Green onion - 2-inch piece
- Ground sesame - as desired
- Grated ginger - as desired
- Seven-spice seasoning - as desired
- Bonito soup stock - ¾ cup
- Soy sauce - 2 tbsp
- Sugar - 1 tbsp
Instructions
- First, prepare the dipping sauce.
- Boil the bonito soup stock.
- Add the soy sauce and sugar.
- Return to a boil.
- Reduce the heat and simmer for a couple of minutes.
- Thinly slice the green onion (or leek).
- Bring 1 gallon of water to a boil then add the udon. Follow the cooking instructions on the bag.
- After boiling, divide the udon amongst 2 serving bowls.
- Pour the boiling water from the pan over the noodles until
they are covered. - Serve the dipping sauce separately in individual small bowls. The green onions, sesame seeds, grated ginger, shichimi are mixed into the dipping sauce to the individual diner's taste.
