Chilean Calzones Rotos Recipe

Calzones rotos is a fried dough snack from Chile. A sweet dough is made from flour, eggs, butter or margarine, baking powder and confectioners’ sugar. The dough is rolled out, cut into small pieces and shaped. After frying they are served warm and sprinkled with more confectioners’ sugar.
In Spanish, calzón refers to underpants and rotos means torn. The shape of the pastry reflects its name. The dough is cut into rectangular strips. A hole is made in the center and one pointy end is placed into the hole and pulled out the other side creating a twist.
Some variations are made with citrus zest which is believed to enhance the flavor. Another variation is made with pisco, a type of brandy from Peru and Chile. They can be made thin and crispy and are often described as a fried cookie however they can also be made thick making them appear similar to a beignet.
Origin & Cultural Significance
Calzones rotos originate from Chile where it’s said that a vendor who was selling treats accidentally exposed her torn underpants by either a fall or a gust of wind blowing her skirt upwards, naming the confection after the incident.

Calzones rotos is a fried food from Chile, consisting of a sweet dough made from flour, eggs, butter or margarine, baking powder and confectioners' sugar. The dough is rolled out, cut into small pieces and shaped.
Ingredients
- Flour - 3 cups
- Confectioner's sugar - ½ cup
- Baking powder - 1 ½ tsp
- Margarine - 2 Tbsp
- Egg (whole) - 1
- Egg (yolks) - 2
- Whole milk - 6 oz
- Oil - for frying
Instructions
- Sift the flour together with the baking powder and powdered sugar in a large bowl.
- Slice the margarine into small pieces.
- Warm the milk slightly.
- Add the egg, yolks and margarine to the flour and mix it in thoroughly.
- Gradually add the warm milk until it forms a dough.
- Knead the dough lightly until it is smooth and no longer sticky.
- Add more flour or milk if needed.
- Let the dough rest covered with a cloth for 10 minutes.
- Roll the dough out, thinly.
- Cut into rectangular strips about 1 inch wide by 3-4 inches long.
- Stretch the rectangle at two opposite ends very gently so that it makes a diamond shape.
- Make an incision in the center.
- Loop one pointy end of the diamond through the hole in the center and pull it through the other side.
- Fry in deep oil at 350 F until lightly browned.
- Drain on a napkin.
- Sprinkle with powdered sugar before serving.
