El Salvadoran Leche Poleada Recipe

Leche poleada is a custard dessert from El Salvador made with milk, sugar, cornstarch, vanilla, cinnamon and eggs. The ingredients are prepared by heating them up as the cornstarch thickens the mixture. It is then chilled before serving cold.

Besides vanilla and cinnamon, other popular flavor variations include topping with lemon zest or adding a layer of caramel to the bottom of the serving dish before pouring the custard over the top then chilling. The consistency of leche poleada varies and is usually adjusted by adding whole milk. It can range from a thick pudding or with more liquid, to a loose custard.

Origin & Cultural Significance

Leche poleada is also particularly popular in Chile. Leche means milk and poleada refers to a beverage or porridge made from milk and a starch.

It is eaten year round, but is most popularly eaten during the holidays when is prepared especially for Christmas, New Years Eve and Noche Buena which is Christmas Eve.

Leche poleada is a dessert from El Salvador. This custard dessert is made using milk, sugar, cornstarch, vanilla, cinnamon and eggs.

Ingredients

  • Whole milk - 5 cups
  • Cornstarch - 150g
  • Egg yolks - 3
  • Sugar - 200g
  • Vanilla extract - 1 tbsp
  • Cinnamon, ground - to taste
  • Salt - 1 pinch

Instructions

  1. Place 2 cups of milk, sugar, cornstarch and egg yolks in a blender.
  2. Add a pinch of salt and blend well.
  3. Set aside.
  4. Place the remaining 3 cups of milk to a pot and bring to a boil.
  5. Once boiling, add the blended mixture to the pot and stir well.
  6. Stirring constantly, add the ground cinnamon to taste and a teaspoon of vanilla.
  7. Let the mixture thicken to desired consistency.
  8. Chill for several hours and serve cold.
