Bolitas de coco is a Costa Rican confection made by combining butter, condensed milk and shredded coconut. The butter and condensed milk are heated up, then the coconut flakes are mixed in. The mixture is cooled slightly before rolling into small balls. They are eaten cooled, as a snack.

Since Costa Rica grows an abundance of coconuts, the flaked coconut is fresh, moist and unsweetened. There is little variation in ingredients besides the quantities used. One version of bolitas de coco does include crushed maria or graham crackers.

Origin and Significance

There is little information about the origin of this treat. It was likely a way to use one of Costa Rica’s plentiful food s and a staple in their cuisine – coconuts.

Ingredients

  • Grated coconut - 250g
  • Grated coconut (for garnishing) - 100g
  • Butter - 1 tbsp
  • Condensed milk - 1 can

Instructions

    1. Place a pot over low heat.
    2. Add the shredded coconut, butter and condensed milk.
    3. Mix until it forms into a ball.
    4. Remove from heat, let cool and refrigerate for 30 minutes.
    5. Divide into 20 balls.
    6. Roll them in grated coconut and serve in liners.
