Riguas are a traditional Salvadoran corn cake or patty made from a simple mixture of corn masa with added toppings like cheese, sour cream, and other savory ingredients. Traditionally cooked in banana leaves, it can also be used as part of a dessert or sweet snack.

Origin and Cultural Significance

Riguas can be traced back to pre-Colombian cuisine, and the Pipil Tribe. Before the Colonial period, El Salvador was known as Cuscatlan, and the indigenous population were descendants of Mexican migrants who emigrated in the 11th Century from the Gulf Coast region of Mexico.

The Pipil culture and diet was heavily influenced by the Mayans, including the use of corn. Even after the Spanish conquest of the country, Pipil culture and cuisine can still be found up and down the country, especially with dishes such as Riguas.

Enjoyed as a snack, or part of a main meal or dessert, Riguas are one of El Salvador’s most popular dishes. The recipe varies from region to region, with different areas of the country preferring different toppings like minced vegetables or a variety of cheeses.

Riguas are a traditional Salvadoran corn cake or patty made from a simple mixture of corn masa with added toppings like cheese, sour cream, and other savory ingredients.

Ingredients

  • Corn masa harina - 2 cups
  • Mozzarella cheese (shredded) - 1 cup
  • Feta cheese (crumbled) - 1/2 cup
  • Water - 1 1/2 cups
  • Salt - 1 tsp
  • Butter (for greasing the griddle) - 2 tbsp

Instructions

  1. In a mixing bowl, combine the corn masa harina, shredded mozzarella cheese, crumbled feta cheese, and salt.
  2. Gradually add water to the mixture, kneading it until it forms a smooth dough. The dough should be moist and pliable.
  3. Divide the dough into 6 equal portions and shape them into thick patties or cakes.
  4. Preheat a griddle or non-stick skillet over medium heat. Grease the surface with butter.
  5. Place the Riguas onto the griddle and cook for approximately 5-7 minutes on each side, or until they develop a golden-brown crust and the cheese melts inside.
  6. Serve the Riguas warm.
