Eswatini Slaai Recipe

Slaai is a traditional Swazi salad which consists of vegetables, avocadoes and peanuts tossed in a ginger and lemon juice dressing. The ingredients are sliced, and the dressing is mixed in or drizzled over. The salad is eaten alone but can sometimes accompany a larger meal.
There is no set recipe for slaai. The standard ingredients are avocadoes, peanuts, ginger and lemon juice. Other ingredients vary by personal taste with the most popular choices being, cabbage, carrots, radishes, beets, onions and salad greens. Sugar is sometimes added to the dressing to tone down the sourness of the lemon. Some slaai is made with grains like quinoa and sorghum to make a heartier meal.

Eswatini is previously known as Swaziland. The name Eswatini means place of the Swati people, the countries’ native ethnic group. The main language spoken is Swazi and slaai is the word for salad.

Ingredients
- Lemon juice - 3 Tbsp
- Ginger (freshly grated) - 1 tsp
- Salt - ½ tsp
- Avocados (large, ripe) - 2
- Peanuts (crushed) - ½ cup
- Radishes (optional, thinly sliced) - 3
Instructions
- Mix the lemon juice, ginger and salt in a large bowl.
- Add the avocado and mix gently.
- Marinate at room temperature for 20 minutes.
- Sprinkle with crushed peanuts, thinly sliced radishes (optional) and serve.
