Ingredients

  • Cassava flour - 2 cups
  • Precooked cornmeal - 1 cup
  • Feta cheese (crumbled) - 1 cup
  • Mozzarella cheese (shredded) - 1 cup
  • Butter (softened) - 1/2 cup
  • Eggs - 2
  • Baking powder - 1 tsp
  • Salt - 1/2 tsp
  • Sugar - 1 tbsp

Instructions

  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. In a large mixing bowl, combine the cassava flour, precooked cornmeal, crumbled feta cheese, shredded mozzarella cheese, softened butter, eggs, baking powder, salt, and sugar.
  3. Mix the ingredients together until a soft, sticky dough forms.
  4. Using your hands, shape the dough into small balls or rounds, about 2 inches in diameter.
  5. Place the dough balls on the prepared baking sheet, leaving some space between each one.
  6. Bake in the preheated oven for 20-25 minutes, or until the Pan de Bono is golden brown and cooked through.
  7. Remove from the oven and allow to cool slightly before serving.
