Sopa de Palmito is a Brazilian soup made from hearts of palm, onions, garlic, cream, and other spices. It can be enjoyed warm or chilled and is most often eaten as a starter or a light meal.

Sopa de Palmito is a Brazilian soup made from hearts of palm, onions, garlic, cream, and other spices.

Ingredients

  • Hearts of palm (sliced) - 2 cups
  • Onion (chopped) - 1
  • Garlic (minced) - 2 cloves
  • Chicken or vegetable broth - 4 cups
  • Heavy cream - 1 cup
  • Butter - 2 tbsp
  • All-purpose flour - 2 tbsp
  • Salt and pepper - to taste
  • Fresh parsley (chopped, for garnish) - 2 tbsp

Instructions

  1. In a large pot, melt butter over medium heat. Add onion and garlic, and cook until softened.
  2. Stir in flour and cook for another minute.
  3. Add chicken or vegetable broth, stirring constantly until the mixture thickens.
  4. Add hearts of palm and bring to a simmer. Cook for about 10 minutes.
  5. Stir in heavy cream and season with salt and pepper.
  6. Serve hot, garnished with chopped parsley.
