Sopa de Mani is a traditional Bolivian soup made with peanuts, potatoes and meat. The dish also includes vegetables like tomatoes and beans. The potatoes and meat are usually cooked first before adding freshly ground up peanuts.

The soup is cooked until the ingredients are tender and the consistency is thick. It is eaten as a main meal and served with garnishes.

Typical garnishes are thinly sliced potato fries, herbs, bread or a spicy Bolivian salsa, known as llajua. The meat used are usually chicken or beef ribs. It may be made with a variety of beans, but the most popular choice is green peas.

Traditionally, sopa de mani was made with chuno. Chuno are potatoes that have been preserved buy freeze drying – a method passed down from the Incas which enables the potato to be stored for many years. Some variations contain rice or macaroni pasta.

Origin & Significance

Sopa de Mani originated from the Cochabamba region of Bolivia. Translated from Spanish to English, sopa is soup and mani is peanuts. Peanuts are believed to have originated in Bolivia, where today several varieties of wild peanuts are still grown and are a regular ingredient in savory cooking.

Ingredients

  • Beef ribs - 6 lbs
  • Salt - 1 tbsp
  • Potatoes - 6
  • Green peas - 1/2 cup
  • Fava beans - ½ cup
  • Peanuts - 1 cup
  • Onion - 1 cup
  • Tomato - ½ cup
  • Cumin - 1 tsp
  • Garlic - 2 cloves
  • Oregano - 1 tbsp
  • Parsley - 1 tbsp
  • Ground yellow chile pepper - 1 ½ tbsp
  • Oil - ¼ cup

Instructions

  1. In a mortar and pestle, grind the peanuts.
  2. Peel and cut the potatoes and tomatoes into quarters, chop the onion finely.
  3. Fry the onion in the oil.
  4. Fill a large pot with enough water to cover the meat and place over medium heat.
  5. Add the meat and bring to a light boil.
  6. Add the salt, tomato, onion, cumin, oregano, chili pepper and garlic and cook for 5 mins.
  7. Add the ground peanuts and cook until the meat is tender and fully cooked.
  8. Add the fava beans, peas, and potatoes to the pot and cook until soft.
  9. Garnish with parsley and serve.
