Iranian Kotlet (Meat Patties) Recipe

Kotlet is a traditional Iranian comfort food made from a combination of ground meat, potatoes, onions, and different spices, that are shaped into patties and fried until golden. The patties are served with rice, bread, or salad and enjoyed at home.

These crispy, savory patties are a staple up and down the country and are often found on Iranian restaurant menus outside the country. 

Origin & Cultural Significance

Kotlet has been popular in Persian cuisine for generations. As one of the country’s most popular dishes, it is often served at family gatherings, holidays, and other special occasions, as an appetizer or as part of a main dish. 

Unlike other popular Iranian dishes, Kotlet is a relatively new addition to Iranian cuisine. The dish first become popular in the 1800s when the British introduced the Persian royal family to potatoes and they used them to make Kotlet for the first time. 

The dish is now commonly served in households up and down the country with each family having their particular way to make the dish, as well as in local restaurants.

Kotlet is a traditional Iranian comfort food made from a combination of ground meat, potatoes, onions, and different spices, that are shaped into patties and fried until golden.

Ingredients

  • Potatoes - 4, peeled and boiled
  • Ground beef or lamb - 1/2 lb
  • Onion (finely chopped) - 1
  • Eggs - 2
  • Bread crumbs - 1/2 cup
  • Turmeric - 1 tsp
  • Salt and pepper - to taste
  • Vegetable oil - for frying

Instructions

  1. In a large bowl, mash the boiled potatoes until smooth.
  2. Add ground beef or lamb, chopped onion, eggs, bread crumbs, turmeric, salt, and pepper to the mashed potatoes. Mix well to combine.
  3. Divide the mixture into equal portions and shape them into oval or round patties.
  4. Heat vegetable oil in a large skillet over medium heat.
  5. Fry the Kotlet patties in the hot oil until golden brown and crispy on both sides, about 3-4 minutes per side.
  6. Remove the Kotlet from the skillet and drain on paper towels to remove excess oil.
  7. Serve the Kotlet hot, accompanied by rice, bread, or salad.
