Ingredients

  • Pork shoulder (coarsely ground) - 1 lb
  • Beef chuck (coarsely ground) - 1 lb
  • Ice water - 1/4 cup
  • Salt - 1 tbsp
  • Black pepper (freshly ground) - 1 tsp
  • Garlic powder - 1 tsp
  • Nutmeg (ground) - 1/2 tsp
  • Hog casings

Instructions

  1. In a large mixing bowl, combine the ground pork shoulder and beef chuck.
  2. Add the ice water, salt, black pepper, garlic powder, and nutmeg to the meat mixture.
  3. Using your hands, mix the ingredients together until well combined.
  4. Prepare the hog casings according to the package instructions.
  5. Stuff the meat mixture into the prepared casings, forming sausages of desired length.
  6. Twist or tie the ends of the sausages to secure the filling.
  7. Heat a grill over medium heat.
  8. Cook the Knockwurst sausages for about 8-10 minutes per side, or until they are cooked through and browned.
  9. Serve the Knockwurst hot, accompanied by mustard, sauerkraut, and bread.
