Origin & Cultural Significance
The traditional process of fermenting and grating cassava roots gives rise to the yuca flour comes from the indigenous communities of Ecuador.
As European colonizers brought dairy products to Ecuador, these ingredients were merged with the indigenous practice of using yuca flour, resulting in the cheesy bread enjoyed today.
In some areas of Ecuador, this bread may feature additional ingredients such as herbs or spices.
A similar bread, Pandebono, is made in Colombia using yuca flour, cheese and eggs.
