Tripas (cow’s stomach) recipes: Mexican Tacos De Tripitas & Portuguese Tripas A moda Do Porto

In Mexico and Portugal, tripas (cow’s stomach) is the key ingredient in traditional dishes: Tacos De Tripitas in Mexico and Tripas A moda Do Porto in Portugal.

You might be surprised to hear about people around the world eating cow’s stomach, but it’s actually not even that uncommon.

Countries all around the world have been eating tripe for centuries, although various different animals’ stomachs have been used in the past with pigs stomach eaten across Europe, Asia and the US.

Mexico and Portugal remain as two countries where cow’s stomach is still eaten fairly regularly. In Mexico, tripas is often served as tacos whereas in Portugal it is served as a stew with beans and rice. Check out these (actually very delicious) recipes for tripas:

Mexican Tacos De Tripitas Recipe

Serves: 6

Ingredients

  • Beef tripe – 1lb
  • Red onions – 2
  • Tomatillos – 6
  • Tortillas – 6
  • Cabbage – 1 cup
  • Raddish – 1/2
  • Cilantro – 1 cup
  • Garlic – 6 cloves
  • Salt to taste
  • Oregano – 1/2 cup
  • Jalapeño – 1
  • Limes – 2
  • Fish sauce – 2 tbsp

Method

  1. First poach the chopped tripe in a large pot of salted, boiling water on a low heat for an hour.
  2. After an hour, take it out of the water and leave to cool whilst preparing the rest of the dish.
  3. Heat some olive oil in a pan and add in tomatillos, garlic and onions. Cook for around 10 minutes.
  4. Next add in the fish sauce, jalapeño and lime juice, and cook for a further 10 minutes.
  5. Take your cooled tripe and add it to a separate pan of hot oil and cook until it starts to brown.
  6. When the tripe is cooked, add it to the mixture and cook to infuse the flavours for a further 5 minutes. Season with salt to taste.
  7. Warm the tortillas and distribute the tripe into each taco. Add radish, cabbage and cilantro to finish.
  8. Enjoy!

 

Portuguese Tripas A moda Do Porto Recipe

Portuguese Tripas A moda Do Porto Recipe

Ingredients

  • Tripe – 1lb
  • Pork sausage – 1/2lbs
  • Smoked bacon – 3lbs
  • Chicken – 1/2
  • Onions – 2
  • Carrots – 3
  • Rice – 5 cups
  • Butter beans – 2lbs
  • Paprika
  • Bay leaf – 1
  • Parsley
  • Cumin
  • Salt
  • Pepper
  • Lard – 2 tbsp

Method

  1. First poach the chopped tripe in a large pot of salted, boiling water on a low heat for an hour.
  2. At the same time, soak the butter beans in a separate pot of boiling water for an hour.
  3. In a further separate pot, boil the chicken, sausage and bacon until tender.
  4. Chop the onions into large chunks and add to the pot with the beans.
  5. Remove any bones from the chicken, chopping the meat into chunks and start adding it and the rest of the meats (including the tripe) to pot of beans along with the lard, paprika, carrots, bay leaf and parsley.
  6. Season with salt and pepper and leave to simmer for 40 minutes or until the sauce begins to thicken.
  7. Remove the parsley and serve with boiled rice.
  8. Enjoy.
