Australian Crocodile Skewers Recipe

Crocodile skewers are a great representation of Australian food, they’ve got everything from the epitomic animal to the clichéd BBQ!

In the Southern US, particularly in states such as Florida and Louisiana, alligator Kebabs are cooked in much the same way.

So whichever meat you can get your hands on, the result will be pretty similar.

Crocodile and alligator meats are known for being slightly rubbery in texture, but the trick to cooking this recipe well is all in the marinading.

If you can marinade your meat over night then even better, but 2-3 hours will still really help seep in to the meat to give the skewers that delicious flavouring.

This recipe will show you how to prepare and cook the skewers but they are also delicious as part of a kebab. Simply add pita bread, salad, onions and a dollop of greek yoghurt.

Ingredients

  • Crocodile or gator meat - 1 fillet
  • Red chilli - 1
  • Light soy sauce - 2 tbsp
  • Ginger - 2 tbsp
  • Garlic - 4 cloves
  • Cayenne - 1 tsp
  • Salt to taste
  • Pepper to taste
  • Lime - 1
  • Olive oil
  • Green pepper - 1
  • Onion - 1
  • Button mushrooms - 12
  • Bamboo skewer sticks

Instructions

    1. First prepare your marinade by combining the chopped red chilli, light soy sauce, chopped garlic, grated ginger, cayenne, salt and pepper, and mixing well.
    2. Now cut your meat in to generous cube chunks and drop them in to the mixture making sure they receive a good coating. Leave in the fridge to marinate for at least 2 hours, preferably longer if you have time.
    3. 10 minutes before you're ready to take the meat out of the fridge, soak your bamboo skewer sticks in water to prevent them from burning.
    4. For the most authentic flavour prepare a barbecue, but if you don't have a barbecue then a grill will work fine.
    5. Start adding your meat to the skewers along with the chopped green pepper, onion and button mushrooms.
    6. Place the skewers on to the grill and begin cooking. They should only take 5 or so minutes, making sure to turn them once or twice to ensure an even cooking.
    7. Halfway through cooking, feel free to add an extra dose to the meat if you feel it needs it.
    8. Take off the grill, squeeze the juice of a lime on top, and serve on its own or with pita bread & salad to make a kebab.
